The Fatso’s Revenge Red is a blend of estate grown Shiraz and Merlot. The fruit is fermented on skins for a period of around two weeks before being pressed off to barrel. The barrel matures in a combination of one and two year old French and American Oak barriques for 12 – 18 months. Following maturation, the wine is blended and then bottled under screw cap to preserve fruit freshness. We aim to produce a bold wine that shows ripe berry flavours with a charry oak backbone. The palate should be rich and full with supple tannins and good length. The Fatso’s Red should be enjoyed young, or cellared for 3 – 5 years.
